Abby Hitchcock grew up on Long Island’s rural East End, known for its fishing and farming (fresh bay scallops, stripers, flounder, farmstands, and pick-your-own strawberries/pumpkins/apples). From her mother she learned to love simple fresh local fare and from her father, an amateur chef who enjoys preparing American and ethnic feasts, a love of reading menus and preparing exotic fare. But it wasn’t until she attended university in England, where she was placed in a "self-catering flat" (shop, cook and feed yourself) that Abby suddenly found that food was her passion: shopping for it, cooking it, eating it, researching it. She began poking about in the greengrocer’s and butcher’s shops and preparing amazing repasts for her English flat mates (happily eating beans on toast)—a New York brunch or an American Thanksgiving for 12— in her tiny kitchenette. After she earned her degree in botany, she returned to the States and enrolled in Peter Kump’s New York Cooking School (now The Institute of Culinary Education). With her blue ribbon cooking diploma in hand, Abby went on to work at The Tea Box at Takashimaya in New York, at Vong in London and at the BBC’s Good Food Magazine. She has been a private chef, worked at Martha Stewart Living television and run her own catering company. Perhaps it was her Botany degree that led to Abby's love of the science of cooking (why do onions make you tear?) and to her three years as a recipe development chef, which she occasionally still dabbles in. She eventually settled down as part owner, then sole owner, of CAMAJE bistro in Greenwich Village. It has been open for almost 13 years, something of a record in Manhattan.

    I reserved 9 slots for an outing with my team at work and we all had a great time! Abigail was warm and inviting and it felt like we were being welcomed into an intimate, relaxing space where we could learn and taste and laugh!

    Chef Roger, was very knowledgeable. He gave us clear directions as we prepped and shared information about the ingredients we were using and their origins and importance in each dish. I appreciated the one-on-one attention he provided and walked away with a few helpful knife tips that I will be using at home. My husband and I really enjoyed this Shop and Cook Class: Thai Cuisine.

    Abigail was great! We made excellent pasta and plan to return for another evening. The class ran over - we ended at 11 instead of 10:30. Not a big deal on Friday night, but it could have been inconvenient during the week.

    Pros: It was a very nice way to spend a Friday evening. I loved that we did not rush through things and got to enjoy the process. Cooking tips from Abigail were great as well. The whole time you get to drink unlimited wine which is considered a plus by a lot of people. We started at 7 pm and left the place closer to midnight. Cons: When I was purchasing the class, the menu was completely different and more exciting and had more courses. We only were shown how to do the simplest things like cutting stuff, and did not get to learn how to make the sauces which are very important. The good thing here is that we were promised all the recipes via email - still waiting on that though. My husband also did not like the fact that for the main course everything (filet mignon, brussels sprouts and mashed potatoes) was kind of thrown in together, and this prevented from tasting each item separately. We think it would have been nicer to lay everything out on a large plate. Overall, we still greatly enjoyed this experience and are planning on doing it again. Perhaps, we will not buy the tickets too far in advance (I bought mine during Christmastime for March 1). There were couples who bought their tickets just a couple weeks ahead and they knew what the new menu was.

    I take a lot of cooking classes in a lot of different cities. This is the best one I’ve ever taken. The knowledge of the chef is absolutely amazing and the classes are kept intimate. It’s a wonderful experience.

    This class was so much fun! The dishes we ended up making were incredible and even tasted and looked like something from a Michelin-rated restaurant. I had actually made their Coeur a la Creme several days after and friends and family were really impressed.

    I hate to leave a bad rating but this is an expensive class and I do not feel it is worth the price. Not only did we not cook anything, we didn't really learn much either. The class starts off with the instructor telling us personal anecdotes for an hour with very few ramen or cooking facts peppered in, followed by the students chopping an excessive amount of ramen toppings for way too long (and peeling about 2 dozen hard boiled eggs - I hate to say it, but it felt more like we were helping the restaurant prep than participating in a hands on cooking class). Once that's over we were lined up to put what we want in our ramen in a pot to be heated up. The "ramen broths" were premade by the instructor and not all that appetizing but also not particularly reminiscent to ramen. Instead of ramen bowls we were handed extremely shallow bowls, overflowing with our assembly line ramen, that we did not in fact cook. Overall, extremely disappointed, and not any closer to knowing how to make ramen than I was before the class.

    Comfortable, casual atmosphere which made everyone feel relaxed. The hands-on learning was terrific. It was a lovely group of students, too, and fun to share the meal we prepared. Definitely learned a few new tricks!

    Abigail was a patient and amazing guide, showing us the ins and outs of how to pick fresh seafood. The cooking of the fish was also an amazing experience as we were able to prepare a meal in the kitchen of her restaurant. The entire experience was extremely enjoyable and I would recommend this for everyone.

    Chef Abigail Hitchcock was just wonderful. She showed me some of her favorite places in Chinatown to shop for Thai ingredients, fish, and veggies. She has so much experience there and I, who am relatively new to the city, would have no way of sorting all the options out like that. Then we went to her restaurant and spent the afternoon cooking in her professional kitchen before her first service started. I learned a ton and she is funny and charming and easy to be around. And the food was amazing. I take a lot of cooking classes in NYC and this was hands down the best yet. I will be back for more!

    Chef Roger was great - patient, funny, knowledgeable. There was plenty of time for questions which he answered fully. It was a really fun class and I felt that my husband and I learned a lot. There were a lot of recipes to get through and I can understand how 7-8 students were needed. But I felt that the restaurant's kitchen can really accommodate only 6 or 7, excluding the chef. Overall, this was a great experience!

    Still waiting for the chef to email the recipes. I especially enjoyed shopping for the fish in Chinatown although the walk back to the restaurant was a hike in the rain. Learned how to filet a fish. Chef Roger was very engaging & informative. Didn’t like all the garnish on the fish.

    Great class! The teacher was very passionate and friendly, which made the class a lot of fun. Plus she was also very knowledgable about butchering and cooking in general, which is also a must! I would definitely recommend it to a friend!

    Informative but casual. The owner and instructor were both friendly and patient. Having a small class was very nice. Techniques learned are very useful for day to day cooking. Having a delicious light lunch and dessert as fruit of our labor was such a treat.

    The class met and exceeded my expectations. Abigail (the instructor) was helpful, informative and really provided a great learning experience. She explained and showed how to select fish properly. Then we headed back to the restaurant to cook. The setup was perfect. We were provided all of the ingredients and were instructed on how to prepare the meals. Abigail and other restaurant staff helped supervise and showed up the proper techinques for cutting, zesting and mixing. Then we all headed to the kitchen to cook. This class is perfect for any individual trying to get some experience in cooking fish. The food turned out great and will definitely be using the recipes and techniques in everyday life. Would recommend this class for singles, couples, mother/daughter outings and girl events.

    I absolutely loved this class. Abby was amazing! I now feel pretty confident to buy fish in Chinatown and cook up a storm with friends and family. Great group of people and I learned a ton (get the pan HOT!) Definitely worth taking this class!

    Excellent class. I took this class because I found cooking with fish somewhat intimidating. Learned everything from how to find the good ones to different ways to cook (plus some other general cooking tips that will be helpful). Abby was a patient, interesting, and fantastic teacher. Definitely recommend.

    Incredible! Abby was so knowledgeable and passionate. We all started as strangers and ended as friends. It was a delightful day. The food was amazing and the experience was lovely. She closed down the whole restaurant and offered us wine, mimosas, coffee, and anything else we needed. I want to do it again :)

Abby was fantastic and her passion really comes through when she's explaining what weMre doing and why. The atmosphere was great and everything we made was delicious.     It was a very nice social event the chef was lovely. I am an avid Thai culture fan & really love authenticity in all endeavors .. I was disappointed that she hadn't been to south east Asia & it was more American Thai. We missed a few ingredients but overall it's still a fun night out. If u love American Thai food this is for u. If u have traveled to the country u may b let down

    The instructor talks too much. It makes it seem like you will make all the items on the menu, but you actually only ending up making one - this makes $125 too much. Also the kitchen is really small. On a positive note, the recipes were good!

    This class was cancelled at the last minute and I joined another class Good Summer Grub by the same provider Camaje! It's a quaint little restaurant with a homey feel, good service, good food and the executive chef Abby Hitchcock is knowledgeable and proficient as a chef. She gave us good information and instruction on cooking in a professional kitchen. We did prep work for the meal we eventually ate like chopping onions, shallots, garlic, making biscuit dough, cutting wax beans and learning knife techniques. She talked about spices, where she buys her produce, meats, cheeses, etc. We did not get to cook our own meal. She did all the cooking of the appetizer, main dish and dessert. The kitchen is small and the class of 5 people made it crowded as the chef on duty for that evening was cooking simultaneously for the dinner customers as we had our class. Nonetheless it was a good learning experience of a working professional restaurant. It's not an easy business but Camaje has been there 18 years, so, Bravo!

    I learned properly how to hold and work with a long knife, in addition to the proper mixing of ingredients.I liked how Abbie took random questions we raised, along with her patience and real hands on. However, We began about 40 minutes late, after us having to rush to make the class in time.No snacks were offered to tie us over, and water was offered about 35 minutes later during this hot wait ,in 90 degree weather. We were later iffered a gkass f wine, as well. There were some nasty interruptions on the part of 1 or 2 people during part of our time there, making for an unpleasant , uncomfortable surrounding. As for the menu itself, I was pleased with the outcome, delicious lobster rolls, potato salad and blue berry cake. I was just surprised we didn't perhaps add a side cucumber, dill salad or some green veggie or beets. Annie was, in spite of the interruptions, a kind, helpful mentor who delivered her product and expertise as best she could..review by J.P.

    It was a great intimate setting. It would have been helpful to be in the kitchen to make the rice, the sushi sous, cut the fish etc. fun experience.

    Was a good class, would have liked if it was knife skills to slice fish or meat as well and not just veggies. Ran overtime, would have liked if it stuck to the timeline

    This class was great. Perfect class size, Chef Abby was very knowledgeable and she made you feel very comfortable with using a very sharp knife. I would definitely recommend this class to anyone that would like to learn how to slice and dice with the best of them.

    Great class! It was very intimate and hands on, and Abby was a great teacher. She taught us not only about the topic of shopping for and cooking fish, but answered all of our other cooking-related questions. The meals we prepared were delicious, and everything she imparted was incredibly helpful in our quest to become better cooks.

    Abby was a great teacher and helped us cook up some great food. The class went well over an hour long, but the staff made sure we had a great time. I would definitely use coursehourse again, and perhaps another class at Camaje in the future.

    There are lots of great things to say about this class staring with Abby, the chef/owner of Camaje. She is a wonderful teacher that obviously loves teaching and cooking. There was lots of useful information and I wish I had brought a notepad with me. The menu she planned was so delicious and we loved taking part in its preparation. If you go during a cold day though, make sure to take a sweater because the restaurant and event the kitchen are pretty cold. I would recommend this class to anyone wanting to learn good basic skills. And don't be afraid to ask questions. Abby is a wealth of information.

    This course was not as advertised. There was no actual instruction. There were bowls of sprinkles, colored sugar, Oreos and other decorative candies on the communal table. You were each given 6 already prepared cupcakes and then given a bowl of icing per couple to color with food coloring. Chef Abby did verbally give her icing recipe, and a paper copy to take home. But, there is no actual baking done. We all expected this to be a learning experience of baking and especially decorating techniques. Aside from the one glass of wine included in the price it was like a children's birthday party. Definitely not worth the $$$. And the cupcakes and icing were not that tasty. I wish I could say something positive, but honestly I can't think of a thing. Even the beginning was not very welcoming

    Abby was great! We learned a lot about spices and methods, and the food was delicious. We all got to be responsible for our own dishes, and we got to spend time doing prep and in the kitchen. I would highly recommend this class to anyone who enjoys Indian cuisine or has an interest in learning about it.

    Great tour of the farmer's market. Abby is a wonderful teacher, very willing to take requests as to the meal you prepare and very helpful when it comes to answering student questions. I definitely plan on taking some other classes here.

    Great class! Was so glad to have taken this course. Learned a lot about how to look for freashness in fish, Learned about the different kinds of shell fish & know if it is fresh, & how to filet a whole fish. I left feeling very confident purchasing & cooking sea food.

    When we arrived we were served tea / coffee / wine. Sitting at a long table in the dining area, Chef Abby taught us about different types of knives that cooks work with and passed examples around the table. We then moved over to a big cutting table that was still in the dining area of the restaurant (not in the kitchen) and practiced cutting many types of vegetables with a chef's knife. Because the restaurant is small, we could hear customers talking, which was a bit of a distraction, but it was a quiet night at the restaurant so it wasn't too bad. Finally Chef Abby showed us how to cut up some fruit. After that we sat down to eat gazpacho and fruit salad. Chef Abby was a great instructor, friendly and enthusiastic, and because of the small class size we all got lots of personal attention. Eat before you come to class, because by the time you get to eat it will be late and while the gazpacho served is good, you may not want that to be your only sustenance that night.

    Bistro Menu for a Chilly Night was great. It was fun, interactive, and informative. Chef Abby was super friendly, down to earth, and open to answering any questions. I would definitely recommend her class to a friend or anyone.

    The Thanksgiving Sides Class at Camaje was fantastic! What's cool is that you're actually cooking in a working restaurant kitchen (small) and not only learning from the class, but also from what's going on around you. Class started with us getting a recipe overview from Chef Abby and then food prep. She taught us some very useful knife skills lessons and worked with us during the prep (very hands on) and answered any questions we had on technique, etc. We then went into the kitchen and created 5 delicious dishes, learning along the way. When the class was over, we sat down as a group and ate. Chef Abby joined us for dinner and conversation. Really enjoyed myself. It was nice to be in a small kitchen with a real chef, it felt very authentic.

    This was a great class! Abby provided us with an awesome menu that combined simple recipes with uncommonly used ingredients. The class was a good mixture of hands-on and demonstration, we also got to cook inside the restaurant's kitchen which was a real treat. Abby was very knowledgable and down-to-earth, answering any and all questions we had even if they weren't related to the recipes.

    The 3-courses I took at Camaje was fantastic. I strongly reccomend anyone who is looking to learn how to cook or expand their already honed cooking skills to take the course with Chef Abby. She is exceptionally knowledgeable, open, and warm. I will certainly be taking more classes with her.
