Paul Vandewoude – Head Chef and Owner has been a professional chef for 35 years. He was born and educated in Belgium and started his cooking career at the tender age of 13 by becoming an apprentice to an established chef in Belgium.He eventually received his degree in culinary arts from the Durbuy Cooking School in Durbuy, Belgium.

After his military service (as chef on a battleship that traveled throughout the Middle East: now that’s cooking in small quarters!) he worked in several top restaurants in his native country. He came to New York to assist with the opening of a Belgian restaurant, and stayed on to become executive chef at the original Le Zinc Restaurant in Tribeca, then executive chef at the charming and popular restaurant Tartine in the West Village.

He began giving cooking classes on Monday nights at Tartine and, after several years, opened his own cooking  school.

    Fantastic night! Food was phenomenal. Learned a ton - cooking techniques, types of ingredients to use (olive oil, salt, pepper, fish, etc), pans and utencils. Paul, the head chef, was a wonderful host and instructor, full of interesting stories and explanations. We really enjoyed the whole experience and definitely plan to do it again.

    Very good class. Learned some good cutting techniques and the meal we helped prepare was very good. However, I was hoping to learn more about knife care and maintenance than was presented. He provided a good foundation but I guess I was looking for something a bit more advanced.

    I attended the course with my son. Chef really took the time to work with each one of us. We picked up new skills as well as fine tuned the ones we already had. We also learned there is no need for oil when roasting. What a revelation! Of course we had a delicious meal at the end…the fruits of our labor lol. We had a great time. I would recommend this class to any level cook.

    Great space and great instructor but it was a very beginner cooking class with not a lot of actual knife skills/technique work. For a three hour class we only cut a handful of items and we finished very early. Also we had no part in preparing/cooking the Cornish Hens, the main item of the dish we cooked as a class. I also found it odd to be using Pepperidge Farms puff pastry and calling it dessert. I had a good time, just was hoping to get a little more confident with my knife skills.

    Chef Paul was fantastic. Not only was the knife instruction top notch, but he took the time to fully explain the processes we were employing to make an entire meal. I never guessed making dinner for 14 could be so easy and fun! Cant wait to put my new skills and knowledge to the test in my own kitchen! Ill definitely be back for another class with Chef Paul

    Paul was an excellent instructor. He took his time explaining all processes and answering questions. Focused on the “why’s not just the “how’s”. The facility was clean and well appointed. I’m looking forward to taking another class at Miette with Paul.

    Phenomenal class! Chef Paul is very knowledgeable and explains cooking techniques clearly. I learned so much about roasting and seasoning, how to hold knives and what different knives are for, and a few french chopping techniques. The food we cooked was delicious! Highly, highly recommended!

    We took it as a group of five, where everyone had a different level of skill and comfort in the kitchen, and we all felt comfortable, learned loads, and had a delicious dinner at the end. The other participants were fun and seemed to be enjoying themselves, the atmosphere was convivial, and the teaching kitchen itself was immaculate.

    This was an incredible class. In truth, it is a knife fundamentals AND a cooking class where Chef Paul Vandewoude goes over some cooking techniques. It was incredible to see how simple some truly delicious meals can be. This class was a real treat and I highly recommend it to anyone who loves to cook.

    Not only was this a fun time with so much to learn, the chef #1 seemed to really enjoy what he was doing and sharing it with others and #2 shared a lot outside of the strict menu and was flexible all around. Highly recommend!

    This class was mediocre. The chef seemed as if he was going through the motions and couldn’t wait to be done. All of the prep work was done in advance so the only hands on thing that my husband and I did was pour the pre-measured ingredients into the ice cream machine and the next 1.5 hours we just stood around and watched others. I would not recommend this class if you have any cooking experience at all.

    Chef Paul was an excellent teacher! He provided clear and easy to follow instruction on knife skills. His tips and guidance around other kicking tips/tricks (roasting, preparing tomatoes etc.) were all fantastic and I have so much that I will be taking from the session. Highly recommend!

    What a great class! Chef Paul is an excellent teacher. I had been shown how to use a knife before, but I didn't "get it." The way Chef Paul demonstrated the techniques was a revelation (as in, Oh, so that's what it's supposed to look like!!). He's very patient and provides lots of tips for making very delicious, and very simple meals!

    I wrote you the morning after saying I want a refund or replacement course. It was unacceptable. I have numerous details for you that you should know about. They begin with a fly swatter on our cooking counter which the chef used again mid class. The chef and kitchen were dirty, he was misleading and cheap, avoiding using basic likely costly ingredients claiming they were not needed. After 2 full hours of a « knife skills « class with subpar and incomplete explaining of true techniques, we had chopped 5 single vegetables and half a peeled apple. It was a joke. His hands were frequently dirty as he did not use a kitchen towel but instead kept wiping his hands in his already dirty chefs coat; his oven mitts filthy burnt and disgusting. My station was just next to the garbage which smelled badly and i had to ask him to please place the garbage further from me. Clearly you do not have quality control of your teachers or facilities because he should NOT be teaching a knife skills class or even a cooking class. I have taken cooking classes before with true chefs and he should not be teaching as he is a terrible communicator, never had us introduce ourselves to create a harmony among the students, no one asked questions as they were inexperienced and did not know that his teachings were incorrect. Please refund my money or offer a replacement class right away.

    The class was really fun! I am a total beginner, can only do the basics, but Chef Paul made everything look easy and fun, and now I feel like I can actually make gnocchi! I would love to take another class here soon!

    The class was a lot of fun. Chef was knowledgeable, organized and very entertaining. The menu was well planned and I liked that everyone got to work on their part of the dinner while at the same time getting to observe what the other participants were doing. The vodka sauce was delicious and the brownies scrumptious. I was a little disappointed with the texture of the potato gnocchi, which I expected to be softer. This class caught my attention specifically because I wanted to refine my gnocchi making technique. I would still highly recommend.

    It was very enjoyable. Great Chef, atmosphere, and ofcourse food. Everything was set up in a way for beginners to learn properly. Learned alot from the Chef that wasnt part of the course as well. Highly recommended to try this class. I will definitely be coming back.

    Well organized & lots of fun!!! I loved the fact that the chef was very interactive with every couple at each station during the preparation of the food and in the end, the meal was very delicious and the dessert was just out of this world !!!! Would recommend to everyone

    The class was very expensive for the food supplied and prepared. I also thought in general that the food was just okay. It was a nice experience and the staff was fine, but I was expecting a more professional, gourmet experience.
