Students will understand that deep, dark reds, along with rich, unctuous sweet wines work best, and it is those we shall serve for the second half of the tasting. The first half, however, will feature elegant whites and off-the-beaten-path reds, paired with select regional cheeses and charcuterie from Murray's Cheese. We regularly host classes on French wines, and we've also held several classes pairing them with chocolate, but this is something different. We've learned from experience that, while wine and chocolate can taste beautiful together, one must be careful in the choosing.
