What you'll learn in this sauces class:

Chef Paul has brainstormed another menu of great sauce-based dishes. Sauces can be intimidating, but they are so versatile and handy, and easy to make ahead of time. 

You will learn how to make a different sauce with each dish on this menu, which features a vegetable dish, chicken, and pasta. Even the dessert has a sauce!
  • Warm Escarole salad with a Buttermilk dressing
  • Roast Chicken with a braised tomato, rosemary, and kale sauce
  • Pasta with a Roasted Pepper, almonds, and tomato sauce
  • Marinated strawberries with a Marsala sabayon
Students below 18 years old should be accompanied by a parent/guardian.

    We had such a blast! Chef Paul was amazing and so knowledgable! We’re were able to learn so much in a short amount of time, leaving well fed, well educated, and feeling like the class was worth the time and money. We will definitely be looking for more classes held by Chef Paul! He did an awesome job!

Miette means, "little crumb" in French. This name was chosen while giving cooking classes at the restaurant Tartine in the West Village. Since Tartine means "slice of bread" we thought it an appropriate name for the school!

There are 2 entrances located between Umbertos Clam House. One is to the left if facing the restaurant and that is 1 flight up the stairs you will need to press 11 then the green bell key and wait to be buzzed in. The other is to the right of the restaurant that is a black street level elevator and just press the elevator button to gain access and go to the 2nd floor. There is also an intercom system there as well in case the elevator is locked. Closest Train stations are: B,D at Grand Street,N, R, J, Q, 6 at Canal Street. Parking is available on Elizabeth & Mott between Hester and Canal Street.
